🌽 Discover the Treasures of Oaxaca 🌶️
Corn, chocolate, mole sauce - the state of Oaxaca is full of food treasures passed down through generations. In this project we will explore the unique ingredients and dishes of Oaxaca, develop new recipes and organise food festivals and tastings where you can enjoy the local traditional cuisine. By working with local farmers and traditional chefs, we aim to rediscover the appeal of the local area by sharing their stories and the history of their ingredients with the world.
🍽️ Focus on Unique Dishes
In particular, we will focus on the colourful mole sauce, the tasty chocolate drink teite and local delicacies such as tamales and tortillas made from local corn. In addition, we will provide an opportunity to learn about the challenges facing the region's unique food culture (decreasing income for farmers and the disappearance of traditional ingredients) and work to solve them.
